Flaxseed Pancakes
FLAXSEEDS ARE LOADED WITH NUTRIENTS AND ARE SURPRISINGLY YUMMY AS PANCAKES!
They contain a high amount of Omega-3 fats which are great for reducing acne and they contain a high amount of lignans. Lignans have anti-estrogenic properties that mimic estrogen and bind to estrogen receptors. This can help old synthetic estrogen from hormonal birth control to be pushed off receptors and cleared out of your body, therefore, helping to rebalance your natural hormonal profile.
Tip: Buy flax seeds whole and blend them into a fine meal just before cooking. This will guarantee that all the essential fats and nutrients are obtained in the meal and not lost in the processing.
Ingredients
2 tablespoons of flaxseeds (blended into a meal)
1/4 cup of almond meal
1 egg, beaten
1 tbsp of unsweetened almond milk
¼ tsp baking soda
1 tsp Thrive Spice (click here for the recipe)
1/4 tsp vanilla extract
Stevia drop to sweeten
Method
Mix all ingredients into a bowl until sticky. Add more almond milk if needed.
Heat a skillet over medium heat and add a teaspoon of coconut oil or ghee
Pour about ¼ of a cup of butter into each pancake and spread with a spoon. Flip after 2-3 minutes. Cook opposite side for 2-3 minutes,
Serve with fresh berries or a dollop of coconut yoghurt. Serves 1
